Must Try Healthy Recipes For Kids (Part 1)

Vegetable & Paneer/Tofu Stuffed Roti Ingredients : Servings: 3 – 4 people

  1. Wheat flour / Multi-grain flour– 3 cups
  2. Water (as needed to make a soft dough)
  3. Grated carrot, grated paneer/tofu, finely chopped beans, spinach, grated cauliflower
  4. Half a tsp ginger paste
  5. Salt to taste
  6. A pinch of black pepper powder

How to make:

  • Make a soft dough out of the flour.
  • In a bowl, mix all the grated and finely chopped vegetables, paneer/tofu, salt, ginger paste and black pepper powder together and keep aside for 10 mins so that the veggies soak up the salt and spice
  • Divide the dough into 8 medium portions.
  • Take one portion and make a smooth ball.
  • Then make a hole in the ball and put a scoop of the mixture and seal it properly.
  • Taking little flour, roll the stuffed ball and make a flattened round shape (roti).
  • Heat a tawa and cook the roti by flipping both sides.
  • When half cooked, take the tawa off the stove.
  • Roast the half cooked roti by placing it directly on the flame or by placing the roti on a grill rack on stove.
  • Flip the Roti to the other side and make sure not to burn it.
  • Serve it hot by putting a little ghee/ butter on one side of the roti with either some curd or coriander and mint chutney or pickles.

Multi Grain Pancakes Ingredients : Servings: 3 – 4 people

  • ¼ cup whole wheat flour
  • ¼ cup all-purpose flour
  • ¼ cup rolled oats
  • ¼ cup cornmeal
  • 2 table spoons powdered Sugar/ powdered Jaggery
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 2 egg whites
  • 2 tablespoons plain low fat yogurt
  • 2 tablespoons skim milk
  • 2 tablespoons water

How to make:

  • In a medium bowl, stir together the whole wheat flour,all-purpose flour,oats,cornmeal, sugar/ jaggery,salt,baking powder,baking soda and cinnamon.
  • In a separate bowl,whisk together the eggs, yogurt,milk and water.
  • Pour the dry ingredients into the wet,and mix properly till all come together making into a smooth batter.
  • Heat a skillet over medium heat,and brush cooking oil.
  • Pour about 1/3 cup of batter per pancake onto the skillet.
  • Cook until bubbles begin to form in the center, then flip and cook until browned on the other side.
  • Healthy and yummy filling pancakes are ready. Serve hot with little organic honey over it or chocolate syrup or peanut butter
